Borsh is a traditional Russian dish, which has a slight sour taste, as it is cooked with beetroot and cabbage. According to many etymological dictionaries borsh was named after the plant cow-parsnip, “borshevik”, which people used to cook borsh with. This dish is cooked in different ways in all the regions of Russia. Some people like to cook this soup without beetroot and call it Green Borsh. |
